Co founder / Owner Chef
Aaron Bishop
Born and raised on the Island of Kaua'i, Hawaii, sushi chef Aaron Bishop brings over 24 years of expertise in Japanese cuisine and five years of experience under a CIA (New York) graduate in French and Italian culinary techniques. He has worked in prestigious restaurants from the Mammoth Lakes area to San Francisco and San Diego. A passionate artist, snowboarder, fisherman, spearfisherman and surfer, Aaron incorporates an ocean-to-table philosophy by sourcing the freshest local ingredients. This approach helps him create a relaxed yet whole natural refined dining experience.

Co-owner & Manager
Antonela Bertarini
She is originally from Argentina, is the co-owner and executive manager of Sushi Assassin. With over 10 years of experience in customer service, she ensures excellence in both front- and back-of-house operations, providing an outstanding hospitality experience. She is a software developer and former quality assurance specialist. She is an avid vegetarian and entrepreneur bodyboarder, owning her own bodyboard school.

Founding Partner & Community Liaison Jimmy May
As a founding partner, Jimmy May played a pivotal role in team-building and establishing the foundation of Sushi Assassin. He is a leader in corporate team-building experiences and collaborates with top companies and high-profile CEOs across the United States. While he has delegated day-to-day operations to Aaron and Antonela, Jimmy remains an integral part of the Sushi Assassin community, referring elite clients and supporting the brand’s growth.
